Food Friday- Super Simple Broccoli Soup


Dixon and me had broccoli soup for the first time in Porto, it was soooooo tasty we made it as soon as we got home. Its crazy simple, and really really cheap (which helps when you're newly home from holiday) so I thought I would share.

You'll need; 
      A hand blender, or food processor, large pot, 2 large florets of broccoli, 1 small white onion, 2-3 cloves of garlic, vegetable stock cube, water, oil, salt, pepper and chilli flakes to taste.

You'll need to do; 
       On a low-medium heat, warm up a little oil in the pot, slice up the onion, and finely dice up the garlic (use as many cloves as you like, we used 3), add these to the heated oil. Keep the onions and garlic moving, and whilst they soften, boil up some water and make the stock following its instructions (if anything add more water that instructed, you dont want to over power the broccoli taste, you could even just use water). Slice up the broccoli into manageable strips, small enough they don't take too much time to cook, and large enough they dont turn to mush as soon as they start to boil. When everything is softened and transparent, add the stock and broccoli. Top up with water or remove stock if needed so the broccoli is only just covered and replace the pots lid. And wait! Check the broccoli with a fork every few minutes until they're pretty soft. When it's soft and cooked, take off the heat, and blitz! Once smooth, add salt and pepper to taste, serve straight away and add dried chili flakes once in the bowl.

You could add cream if you'd like, but I really don't think it needs it. We had ours with some fresh  tasty bread.
